The responsible persons of the Spanish sparkling wine growing area Cava have presented the plans for the reorganisation of the appellation in London. According to these plans, three geographical premium zones are to be defined, in which strict rules for the cultivation and export apply, i.e. in other parts of the wine-growing region.

In these zones, for example, the minimum age of the vines would be ten years, and the lees ageing of the basic wines would have to be at least 15 months. The traditions of wine-growing culture in these zones would be incorporated into the regulations in each case. In addition, the grapes for Reserva and Gran Reserva Cavas may only grow in previously registered vineyards.

In this way, those responsible want to strengthen the quality and image of the DO Cava. For many years, there has been a bitter dispute among producers about the value of Cava.
