Organic producers in the Spanish Cava region of Penedès want the world's first D.O. (Denominación de Origen) for organic sparkling wine. To this end, 27 sparkling wine producers have joined forces, which will be able to produce organic sparkling wine from the current D.O. Cava and have developed their own region definition with Corpinnat and Classic Penedès. The sparkling wine winemaker Josep-Maria Albet i Noya, former chairman of the Penedès DO, told the British online magazine Harper's that the protection of origin for consumers as well as the protection of high quality in production should be the main focus. "We want to use the name Cava and another one that sounds similar," he stressed, "we are interested in high-quality organic sparkling wine from the Penedès region But we don't want that name to become part of the denomination either. According to him, the two associations have been working on a D.O. definition for six months, and "dozens of producers" are also supposed to be interested in joining. According to the plans, the new Corpinnat sparkling wines are to be at the top of the quality pyramid. When the decision on a new D.O. region will be made is currently still open.
