What does straw wine mean?
In Austria, the predicate Strohwein or Schilfwein denotes a sweet wine produced from fully ripe grapes with a minimum must weight of 25 degrees KMW. The grapes are dried for at least three months before pressing in order to concentrate the ingredients. This is usually done on straw or reed mats (hence the name). If the grapes have reached a must weight of at least 30 degrees KMW through drying, they can also be pressed after only two months.
