What does Cabinet mean?
In Germany,Kabinett is the first of six predicate levels within the quality system. The grapes for a Kabinett wine must have a minimum must weight of 67 to 82 degrees Oechsle, depending on the growing region. Apart from this, the wine must fulfil the criteria of the quality wine category. Kabinett wines can be vinified in all flavours from dry to residual sweet.
In Austria, Kabinett is the designation for a superior quality wine, but is not considered a predicate in the sense of the wine law. The minimum must weight of the grapes must be 17 degrees KMW. Austrian Kabinett wines must be vinified dry.
