What does selection mean?
Auslese is the third of six predicate levels within the quality system in Germany. The grapes for a Auslese must have a minimum must weight of 83 to 100 degrees Oechsle, depending on the growing region. Apart from this, the wine must fulfil the criteria of the quality wine category. Auslese wines are usually semi-drymedium sweet or sweet, but can also be vinified dry. The grapes can be at least partially noble rotten, i.e. infected by the noble fungus Botrytis cinerea.
In Austria, the fully ripe grapes must have a minimum must weight of 21 degrees KMW for wines with the predicate Auslese. Auslese wines are always vinified with residual or noble sweetness.
